I love to use fresh yeast when I can, and buy Agrano Bioreal Organic Fresh Yeast from BakeryBits as no-one locally sells fresh yeast. It always comes with a 1-week best before date, but due to my intermittent baking schedule I usually end up throwing some away. I usually order 4 x 42gm cubes, as a smaller quantity doesn't make economic sense.
What does the forum think about freezing, or storing fresh yeast longer term?
